Organic Vegetable Shish Kabobs

Football season is upon us, which means it’s tailgating time! Whether you’re a big football fan or occasionally enjoy a game or two with friends, there’s no denying that the food is something everyone can look forward to. From pizza to cheesy dips to wings, you’ll find no lack of calorie-laden choices at most tailgating events and football parties. After all, eating healthy is not exactly the first thing that comes to mind when it comes to the usual game day fare. However, tailgating doesn’t always have to be an unhealthy affair, especially when there are many different ways to get your snack on without sacrificing flavor. In fact, our Organic Vegetable Kabobs are just the perfect answer for getting more vegetables into your tailgating menu!

Food on a stick is always a crowdpleaser at game day parties. Portable and useful for feeding a crowd, shish kabobs are a creative way to serve grilled vegetables. Cooking vegetables this way helps draw out their natural sweetness while adding that smokey, charred flavor you get only from the grill. For this shish kabob recipe, we chosen some of our favorite organic vegetables for grilling such as zucchini, cherry tomatoes and mushrooms and marinated them in a simple yet flavorful Asian-inspired marinade. Melissa’s Certified Organic Produce is hand-selected for the highest quality and is free of artificial or synthetic fertilizers. Bursting with unforgettable flavor, our Organic Vegetables are attractive choice for many different recipes. Organic Vegetable Shish Kabobs

Yields: 6 servings

Ingredients

1. Soak your wooden skewers in water for half an hour.

2. Rinse clean and dry your vegetables. Slice them as evenly as you can.

3. In a separate bowl, mix together the olive oil, soy sauce, salt and pepper as your marinade.

4.Place the vegetables and marinade in a zip lock bag and toss gently to season all the vegetables.

5. Arrange the vegetables onto the skewers before placing on the grill. You can do this step yourself or you can have your guests make their own vegetable skewers.

6. Preheat your grill to medium-hot. Place the skewers onto the grill for about 6 to 7 minutes, turning them over once halfway through. Brush the vegetables with any leftover marinade periodically.
