Grilled Peaches with Basil and Goat Cheese

There’s something magical about biting into a ripe peach. After all, peach season is currently in full swing and this time of the year couldn’t be a better time to enjoy the chin-dripping juiciness of the beloved stone fruit. Their floral aroma, fuzzy skin and sugary sweet flesh makes them the ultimate taste of the summertime. And with the warm weather and longer days comes endless weekend parties. An elegant summer dessert, grilled peaches are an easy and impressive way to end a backyard BBQ without spending too much time in the kitchen. Grilling peaches allow for their natural sugars to caramelize, giving them an unforgettably sweet and smokey flavor that’s perfect for dessert.

Grilled Peaches with Basil and Goat Cheese

Yields: 8 servings

Ingredients

1. Whisk together the olive oil, honey, balsamic vinegar and some of the basil in a bowl.

2. Place the peaches in the bowl and make sure each piece is covered with the mixture. Marinate for at least half an hour.

3. Prepare your grill on medium heat. Place the peaches face down on the grill for about 1 and 1/2 minutes. Then, turn the peaches at the opposite angle to give them grill marks and leave them there for another 1 and 1/2 minutes.

4. Turn the peaches onto the other side and grill for another 3 minutes.

5. Take the peaches off the heat and drizzle the remaining marinade on top of them.

6. Sprinkle the goat cheese and remaining pieces of chopped basil on top of the peaches.
